Healthy Living: 4 Delicious Avocado Recipes

Eating healthy is very easy for some people and for others, not so much. I happen to be on the “not so much” side of things so it helps when I research delicious ways of incorporating foods that are good for me. Avocados contain a high amount of potassium, heart healthy fatty acids, and a lot of fiber—they are very good for us! Here are some yummy avocado recipes to try…

Avocado with Fried Eggs

To get started add 1/2 teaspoon of olive oil to a small frying pan allowing it to get to a medium heat. Once the heat is right, crack one egg over the pan and pour it in slowly. Make sure you cook the egg until the white part is firm all the way through. Add black pepper, a little sea salt, and any other seasonings and then flip it over. While that is cooking on the second side, add your whole wheat toast to the toaster and put your avocado into a bowl and mash it up with a fork. Spread your avocado on your toast and add your egg on top.

Avocado Veggie Taco’s

In one large bowl add beans, corn, red onions diced up, a pinch of cumin, paprika, salt, and pepper. Stir for a minute with a large spoon. Then, chop up your avocados in very thin slices. Serve the veggie taco mixture inside tortillas, topped with cilantro, fresh squeezed lemon and avocado slices. You can add bowls of dressing like salsa and ranch to drizzle on top with a small spoon.

Avocado Burger with Cheese

Combine Worcestershire, a pinch of salt and pepper, and add it to your meat (turkey or beef). Mix together and shape them into small patties and let them sit in the fridge for 15 minutes. Once done, pan fry the burgers in olive oil and slice the avocado, onion and tomatoes in thin slices. Once the burgers are cooked, add a slice of cheddar cheese and gruyere cheese on top so that it can melt on the warm burger.  Then, place the burger on a brioche bun, add the toppings and enjoy!

Caprese Stuffed Avocado

Cut your avocado in half and remove the pits. Chop one small tomato and 1/2 of a cucumber into very small squares. Take the cucumbers, tomatoes, and pomegranate seeds and mix together in a small bowl with a little basil oil. Spoon the mix into the avocado halves and add a little pepper and your desired cheese on top. If you want, you can drizzle a small amount of balsamic dressing on top, too.
